|Job Description||Directly control the process of making good quality yoghurt base from mixing; pasteurization and re-pasteurization, inoculation, fermenting, cooling and supply bulk yoghurt base to Filling Machines including all relevant documentation.|
Monitor services: mains water, steam, electricity, ice water, control air
Ability to maintain accurate primary documentation to support MMS/BPCS & GMP- Mass balance bookings and investigate fat & protein and bulk losses.
Work in close collaboration with Analytical Lab to obtain accurate Fat & Protein results for input into solver and mass balance.
Ability to control processing equipment maintenance schedules.
Adhere to FSSC 22000 Food Safety system, and support the SHER function.
Control all relevant CIP’s, validations and verification, including documentation & records.
Have sound knowledge of SCADA and PLC’s
Participate in internal and external audits: FSSC 22000, HO Raw Milk Audit, 20Keys, Agri, and NOSA and GMP-Mass Balance Audits.
Ability to communicate across relevant departments.
Take lead in trouble shooting and engage to generate Non- Conformances and Corrective Actions.
|Required Skills||Minimum: Matric, Grade 12|
Basic dairy qualification
A Tertiary Qualification: National Diploma / Equivalent in Biotechnology, Food Science would be advantageous.
Minimum 3 yrs. in a manufacturing preferably processing environment in FMCG
